Title: Smashed Potato Casserole

Yield: 6 Servings

4lgBaking potatoes, not the waxy kind
1 Stick butter
1tsSalt
1/2tsWhite pepper
1cGrated cheddar cheese
  Milk to smooth consistency
3 Eggs separated

Boil potatoes. I cut them into about 6 pieces each and covered them with water. Microwaved on high for 10 minutes, rotated and cooked again for another 6. They were fork tender at this point. Drain off the water, add the butter and smash away. When potatoes are pretty smashed up, add beaten egg yolks, smash, salt, smash, pepper, smash, and then cheese. I added just a splash of milk to get a nice smooth consistency. Beat the egg whites until stiff and fold into potato mixture. Place into greased or Pamed casserole and sprinkle with more grated cheddar cheese. Place casserole in large enough pan so it will hold enough water to come up about 2 inches on the sides. Bake in 375 oven for about 30 minutes.

Make pancakes with leftovers. Perfect in sandwich maker. From: Henry Kasten
